Looking for Fall Recipes? We've Got 'Em!


Happy Fall everyone!! Here are some fun recipes I enjoy making during this time of year:

COCOA HALLOWEEN COOKIES

¾ cup icing sugar ⅓ cup soft butter or margarine (for icing)

1 ½ cups flour

2 cups of icing sugar (for icing)

¼ cup cocoa

1 tbsp milk (for icing)

1 cup margarine

½ tsp vanilla (for icing)

½ tsp vanilla orange food colouring (for icing)

Cookies

Sift icing sugar, flour, and cocoa together in a mixing bowl. Blend margarine into dry ingredients with a spoon to form soft dough. Add vanilla. Roll into 1 inch balls; place on ungreased cookie sheet about 2 inches apart. Flatten dough with fork. Place in oven at 300° F for 20-25 minutes.

Icing

Cream together soft butter or margarine, ½ cup of icing sugar. Add milk, vanilla, and 1 ½ cups of icing sugar. Beat until blended, then stir in a few drops of orange food colouring. Beat until soft and well blended.

HOMEMADE HOT CHOCOLATE

1 cup of milk

2 tbsp of cocoa

2 tsp of sugar

Stir together cocoa and sugar in a small saucepan. Vigorously stir in milk, first by spoonfuls then in a stream. Heat, stirring constantly and scraping the bottom of the pan. Serves 2.

Tomato Soup

32​ ​ounces​ ​diced​ ​canned​ ​tomatoes,​ ​do​ ​not​ ​drain

1​ ​can of​ ​chicken​ ​broth

1​ ​can of​ ​Campbell's​ ​Tomato​ ​Soup

2​ ​Tablespoons​ ​butter

2​ ​Tablespoons​ ​sugar

1​ ​tablespoon​ ​onion​ ​powder​

¼​ ​teaspoon​ ​baking​ ​soda

2​ ​cups​ of ​cream

Mix canned tomatoes, chicken broth, tomato soup, butter, sugar, and onion powder. Simmer over low heat for 30 minutes. Add baking soda, mix well. The soup will foam. When it was stopped foaming, slowly add the cream. Heat the mixture over medium heat, stirring constantly. Do not let it come to a boil, or it will curdle. Serve and enjoy.

OATMEAL CHOCOLATE CHIP COOKIES

1 cup of butter

¼ cup of sugar

¾ cup of brown sugar

1 tsp vanilla

1 egg

1 ½ cup flour

1 tsp baking soda

2 cups oatmeal

1 cup chocolate chips

Mix butter, sugar, and brown sugar together in a large bowl. Add in vanilla and the egg, mix well. Add in flour and baking soda, mix all together. Finally, mix in oatmeal and chocolate chips. Roll into balls and place on a baking sheet. Bake at 350° F for 15-20 minutes until golden brown.

COUNTRY HAM CASSEROLE

2 cups rotini pasta

2 tbsp butter

1 onion, chopped

½ cup chopped green or red bell pepper

2 cups cubed cooked ham

1 cup grated mozzarella cheese

1 can cream of mushroom soup

¾ cup milk

1 tbsp Dijon mustard

Salt and pepper

1 tbsp grated parmesan cheese

1 tbsp chopped fresh parsley

Cook pasta according to package, drain. Combine butter, onion, and pepper in 12-cup casserole. Microwave, uncovered, at high for 3 to 4 minutes or until vegetables are tender. Stir in ham, mozzarella cheese, and pasta until well combined. Blend soup, milk, mustard together. Pour over ham mixture. Stir well and season to taste with salt and pepper. Cover and microwave at medium-high for 6-8 minutes or until heated through and cheese is melted. Stir once or twice during cooking. Sprinkle with parmesan cheese and parsley. Let it sit for 5 to 10 minutes before serving. Serves 4.
